How to Soften Honey Without Ruining It

You reached for the jar and got a spoon that won't go in easily. Before you do anything about it, the useful news: your honey is fine. Crystallization is what real honey does.

This guide covers how to soften honey back to a pourable state, the one temperature you need to stay under, and why the jars that never harden are the ones worth asking questions about.

Why your honey turned solid

Honey is a supersaturated sugar solution, meaning it holds more sugar than the water in it can keep dissolved. That state is unstable. Over time, the glucose comes out of solution and forms crystals, and the remaining fructose and water stay liquid around them. Higher-glucose honeys do this faster.

Crystals need something to form on. In raw honey, that's the specks of pollen, propolis, and beeswax we don't filter out. Ultra-filtered honey has had those removed, which is one reason it can sit on a shelf for years without changing. When your jar goes solid, it's telling you what's in it.

The only number you need: 104°F

Honey's enzymes start breaking down above about 104°F (40°C). Push it further and you get hydroxymethylfurfural, or HMF, the compound the Codex Alimentarius Standard for Honey uses as a marker for heat damage.

Easier way to remember it: bees hold the brood nest around 95°F. Honey in a hive never gets much warmer than that. Keep your jar at or below hive temperature and you can't go wrong.

Warm water feels comfortably warm on your wrist at about 100°F. That's your target. If it feels hot, it's too hot.

How to soften honey: the warm water bath

This is the method we use and the only one we recommend.

  1. Run the tap until the water is warm to the touch, not hot. Fill a pot or bowl.
  2. Loosen the lid on the jar and set it in the water. The water should come up to the honey line, not over the top of the jar.
  3. Wait 20 to 30 minutes, stirring every 10 minutes or so to move the warmth through.
  4. When the water cools to room temperature, dump it and refill. A 17 oz jar usually takes two rounds. A 2.75 lb jar takes longer.

Slow is the whole point. The honey will go from solid, to grainy, to pourable.

What not to do

The oven. Most ovens don't go below 170°F, which cooks the enzymes out of the jar. Some older guides recommend this. Skip it.

The microwave. It heats unevenly, so parts of the jar blow past 104°F while other parts are still solid. You end up with scorched honey and crystals.

Boiling water or the hot tap. Household hot water reaches 120°F or more in a lot of homes. Warm, not hot.

Softening the same jar over and over. Each round of warming costs you a little more enzyme activity, even when every round stays in range. Soften what you'll use, or switch to a smaller jar.

How to slow it down

You can't stop crystallization in raw honey, and you wouldn't want to. You can slow it.

Keep it at room temperature. The 50 to 60°F band is where crystals form fastest, which is why a cold garage or an unheated pantry is the worst place for a jar. A kitchen cabinet at 70°F or above is ideal.

Skip the fridge. Refrigerator temperature will give you a jar you need a chisel for.

Use the freezer for the long haul. Freezing stops crystal growth cold. The honey goes stiff rather than staying pourable, so this is a storage method rather than a softening one. It works well for a bulk pail you won't finish quickly. Thaw in a warm water bath when you're ready.

Close the lid. Honey pulls moisture out of the air. A jar left open in a humid kitchen can take on enough water to ferment.

Glass or food-grade plastic is fine. So is stainless steel, which is what our equipment is made of. Copper and bare iron are the ones to avoid, since honey is acidic enough to react with them.

Which of our honeys hold out longest

Crystallization speed comes down to the glucose-to-fructose ratio, and that comes from the flower.

Our black locust stays liquid longer than anything else we bottle. Black locust is Robinia pseudoacacia, the same tree whose honey gets sold as "acacia" in Europe, and it runs high in fructose. If you want a jar that stays pourable with no effort, that's the one.

Our western clover sits at the other end. Clover is high in glucose and sets up relatively fast, which is exactly why creamed clover honey is a traditional product.

Or don't soften it at all

Crystallized honey spreads like butter, which some people prefer to chasing a drizzle around a slice of toast. It bakes the same, sweetens tea the same, and stirs into a marinade the same once it warms up.
