Cranberry Granola with Cape Cod Cranberry Honey

Making homemade cranberry granola is easier than you think and costs less than buying it at the grocery store. You control what goes in, so you can say bye to excess sugar, mystery ingredients, and preservatives. This recipe is gluten-free, dairy-free, and lightly sweetened with our cranberry honey, which gets its flavor solely from our bees pollinating cranberry blossoms on Cape Cod.

The cranberry honey's flavor accentuates the cranberries, so this recipe is the most authentic cranberry granola you can make!

Ingredients: 
3 cups (300 g) old-fashioned oats
1/2 teaspoon salt
1/4 cup (53 g) brown sugar
1 cup raw unsalted almonds, divided 
1/4 cup (85 g) raw cranberry honey
3 tablespoons coconut oil
1/4 teaspoon vanilla extract
1/2 cup dried cranberries

Instructions:
Preheat the oven to 325°F. Line a rimmed baking sheet with parchment. In a bowl, combine oats, salt, and brown sugar.

In a food processor, pulse 1/2 cup of the almonds until very finely chopped. Add to the oat mixture. Coarsely chop the remaining almonds and add them as well. Toss to combine.

In a small saucepan over medium-low heat, warm the honey and coconut oil just until the oil melts. Remove from heat, add the vanilla, and whisk.

Pour the honey mixture over the dry ingredients and stir until evenly coated. Spread the granola evenly across a baking sheet.

Bake for 15–25 minutes, tossing once or twice, until lightly golden and fragrant. Baking time will vary depending on how crunchy you prefer your granola.

Let cool completely on the baking sheets before breaking into pieces and storing in an airtight container.
